Ingredients (serves 4-6)

  • 1/2 cup olive oil

  • 4 spring onions, finely chopped 

  • 1 handful coriander, finely chopped

  • 1 medium shallot, thinly sliced

  • 3 garlic cloves, minced

  • 2 teaspoon chili flakes

  • 2 tablespoon Red Habanero & Juniper Berry Chilli Jam

  • 1/2 tsp salt

  • 10 oz Greek yogurt (1 1/4 cups

  • Pinch of salt



Method

1. Heat oil in a small saucepan for 3 minutes over medium-high heat, lowering the temperature if the oil starts to smoke. Meanwhile, add the spring onion, chilli jam, coriander, shallot, garlic, chili flakes, and salt to a bowl. Pour the hot oil into the bowl, and let it infuse for at least 5 minutes.

2. Spread the yogurt on the bottom of a shallow bowl, and drizzle the herbed oil on top. Serve with crackers, bread, or veggies!
