Ingredients

  • 1 medium mango, semi ripe, cut into thin strips

  • 100g mange tout, cut into thin strips

  • ¼ red pepper, cut into thin strips

  • Crushed, roasted peanuts.

  • Fresh coriander leaves

  • 3 teaspoons Red Habanero & Juniper Berry chilli jam

  • 2 teaspoons Light soy sauce

  • 2 tablespoons Lime juice

  • 1 teaspoon minced garlic

  • 1 red chilli finely chopped, plus few rings for garnish  

Method

  1. Mix mango, mange tout, red pepper and a few coriander leaves in a bowl.

  2. Make dressing with red chilli jam,garlic,  light soy sauce, red chilli and lime juice, taste and make to your taste.

  3. Drizzle over the mango mix, plate, sprinkle peanuts and garnish with a few coriander leaves.
