Lamb Kofte Sliders with Orange Zest & Coriander Seed Chilli Jam

Ingredients for Kofta (3-4 per person)

- 250g lamb mince - rolled into small patties approx. 3cm diameter

- 1 clove garlic - finely chopped

- 1 teaspoon ground cumin

- ½ teaspoon ground coriander

- 1 ½ teaspoon coriander seeds - toasted and roughly ground

- pinch nutmeg

- ¾ teaspoon salt

- 25g fresh coriander - finely chopped

- 25g fresh mint - finely chopped

Other ingredients:

- Orange Zest & Coriander Seed Chilli Jam

- Cucumber - half

- Fennel - 1bulb

- 15g fresh coriander - finely chopped

- 15g fresh mint - finely chopped

- Natural yogurt

- Pinch of salt

- Water

- Oil (of your choosing)

- Slider buns

Method

1. For the kofta, combine all the ingredients and mix well. Form into small patties a little bigger than the slider buns and set aside. Saucy Sister’s Tip: Test the flavour and seasoning by frying off a teaspoon of mixture in a hot pan.

2. Finely slice the cucumber and fennel - ideally using a mandolin - and place in a bowl.

3. Add the finely chopped mint and coriander and a pinch of salt. Note: you can add in other ingredients to your salad e.g. thinly sliced red onions, rocket, pea shoots - everything will work!

4. Add 1 ½ heaped tablespoon Orange Zest & Coriander Seed Chilli Jam and mix through - set bowl aside for later.

5. Add 4 tablespoon yogurt in a separate bowl and add 2 tbsp Orange Zest & Coriander Seed Chilli Jam - mix and set aside for alter.

6. Cook the lamb kofta by frying in a pan for 2-3 minutes either side.

7. Lightly toast your slider buns and add the yogurt to the base. Top with your cucumber and fennel salad and cooked kofta.
Add a teaspoon of chilli jam on top and finish with the top of the slider bun and enjoy.
