Halloumi & Watermelon Skewers Using Red Habanero & Juniper Berry Chilli Jam
Ingredients - Serves 4-5 people
- Watermelon - roughly cubed in 2cm x 2cm pieces (16-20 pieces required)
- Halloumi - roughly cubed in 2cm x 2cm pieces (16-20 pieces required)
- Red Habanero & Juniper Berry Chilli Jam
- Thinly sliced fresh mint leaves
Method
1. Skewer the watermelon and halloumi (note - if serving as a canape, use 1 halloumi and 1 watermelon cube per mini skewer, otherwise you could alternate 4-5 cubes per regular sized skewer).
2. Generously brush with the chilli jam.
3. Heat a non-stick griddle pan and place the skewers in the pan OR place directly onto the BBQ.
4. These will take 2-3 minutes per side - the halloumi should char nicely.
5. Once cooked, take off the heat and leave to cool.
6. Brush again with the chilli jam and garnish with mint leaves.
Alternatively, you could make this into a salad with some rocket and shallots!
