Grilled Pineapple and Vanilla Ice Cream Using Pineapple & Szechuan Peppercorn Chilli Jam
Ingredients - Serves 4-5 people
- Pineapple - pineapple rings with core removed (1 or 2 pieces per person)
- Unsalted butter
- Vanilla Ice Cream
- Pineapple & Szechuan Peppercorn Chilli Jam
Method
1. Generously brush the pineapple with the chilli jam.
2. Heat a non-stick griddle pan with a small knob of butter. Place the skewers in the pan or directly onto the BBQ.
3. These will take 3-4 minutes per side to caramelise and char nicely.
4. Remove from heat and place in your serving bowl.
5. Serve with a scoop of your favourite vanilla ice cream.

The Orange Zest & Coriander Seed Chilli Jam could also be used in a similar way as a lemon drizzle cake recipe, except mixing the chilli jam in the sugar syrup and drizzling over the cake using orange zest/juice (instead of lemon zest/juice) – yum!
