Ingredients

  • 2 corn on cob

  • 2 tablespoons oil

  • 3 tablespoons chilli jam

  • Salt & pepper to taste

  • To serve

  • Lime

  • Fresh coriander

  • Butter

Method

  1. Mix the oil, chilli jam, salt & pepper in a small bowl.

  2. Pull out the outer husks, making sure some of the inner ones remain attached.

  3. Remove the thin strands of silk from each.

  4. Brush chilli jam mixture all over the corn and then cover with the inner husks.

  5. Either place on BBQ or griddle pan, turning until cooked all over. This should take about 5-7 minutes on a high heat.

  6. Remove husks, serve with knob of butter, lime wedge and sprinkle with chopped coriander.
